Thai Green Curry - Serves 2
You will need:
200g chicken, diced
30g Thai Taste Green Curry Paste (use more for a hotter curry)
1 tbsp Thai Taste Rice Bran Oil or sunflower oil
200ml Thai Taste Coconut Milk
1 tsp Thai Taste Palm Sugar
1 tsp Thai Taste Fish Sauce
6-8 baby corn, halved
6-8 mange tout
1. Heat the oil in a deep frying pan and add 1 tbsp of coconut milk.
2. Add Thai Taste Green Curry Paste and mix until the aromas are released (3 mins).
3. Add the chicken, stirring to coat the meat with the paste (about 3 mins).
4. Stir in the fish sauce, palm sugar and the rest of the coconut milk, simmer until the meat is cooked (about 5 mins). The sauce should not be too thick.
5. Add the baby corn and mange tout and continue to simmer for a further 2 mins.
Add chopped coriander and sliced green chillies to finish off the dish.
Serve with Thai Taste Sticky Rice.
Tips: Use chicken thighs or legs for an even better flavour. Substitute chicken with chopped vegetables or prawns. For a Thai Red Curry simply use Thai Taste Red Curry Paste and beef or duck.
